Pea, Feta & Bulgur Wheat Salad
I made this salad at the weekend and it was de-lish! To good not to share. It basically includes all of my favourite things - bulgur wheat, feta, peas, radish, mint. All the good stuff! Not only is it super colourful and tasty, it's ridiculously easy to make, and requires practically no dressing. The ingredients speak for themselves.The quantities below can be altered to suit your tastes. To be honest, I work with the method of 'throw it all together'... Literally! Everything gets shaken around in a large tupperware.
Ingredients (serves 6):
150g feta
150g bag spinach
1 punnet plum tomatoes, quartered
1 small bag radishes, sliced
Celery sticks, sliced
50g frozen peas
50g frozen broad beans
200g bulgur wheat
300ml vegetable stock
Handful of fresh parsley and mint, roughly chopped
1 handful pine nuts
Salt and black pepper to season
Olive oil to season
Method:
Begin by laying your bulgur wheat flat in a large roasting dish. Pour over the hot stock and cover with clingfilm for 20 minutes. Remove the clingfilm and stir. If there is still some water remaining, leave to evaporate for longer or drain. (I always use this technique rather than the hob, as I find it works better)
Add your frozen peas and broad beans to a pan and pour over boiling water. Either simmer for a couple of minutes and drain, or soak for 5-6 minutes and drain.
In a large tupperware, add your spinach, tomatoes, radishes and celery.
Add your peas, beans and bulgur wheat once drained.
Add the chopped parsley and mint, and season with a good glug of olive oil, salt and pepper.
Toss together, serve in large bowls and crumble over feta and a sprinkle of pine nuts.
Season with extra black pepper if preferred.
