Chocolate Banana Bread

Is there anything better than coming home to the smell of freshly baked banana bread filling the kitchen? I absolutely love to make a banana loaf, not least because they're super quick and easy to make, but because they smell and taste so good.

Whenever we have bananas browning in our fruit bowl, I instantly think to make a banana loaf, because as I said, they're so easy to make. In less than an hour, you can make the mixture, bake it and have everything cleaned up!

Banana bread is also a great recipe to make if you're feeling a little experimental. It's easy to add other ingredients such as chocolate chips, raisins, Nutella or flaked almonds. For this particular bake, I added a couple of teaspoons of cocoa powder, as we didn't have any chocolate in the house, but it worked just as well.

Ingredients:

  • 3x bananas

  • 140g butter

  • 140g caster sugar

  • 140g self raising flour

  • 2 eggs

  • 1 tbsp cocoa powder

Method:

  1. Heat oven to 200 degrees and in a bowl mash 2 bananas.

  2. Cream the butter and sugar together, and gently fold in half of the flour. Mix in one egg, the rest of the flour and the second egg.

  3. Fold in the mashed bananas and mix in the cocoa powder.

  4. Line a loaf tin with parchment paper, spoon the banana loaf mixture into the tin. Slice the remaining banana lengthways into thin slices and place on top of the mixture.

  5. Bake for 35-45 minutes, or until browned. Check if the loaf is cooked by poking a skewer into the loaf. If it comes out clean its baked.

  6. Cool for 10 minutes in the loaf tin before removing to a wire rack. Serve warm or continue to cool. Banana bread also tastes great sliced and toasted at a later date.
