Homemade Pesto
I was very kindly gifted this Kitchenaid food processor by the lovely team at AO.com and the first recipe I decided to make with it, was a homemade pesto. I've always knew that a basic pesto recipe was very simple to make, but I've never actually tried my hand at it.The Kitchenaid food processor is so incredibly easy to use and makes creating pesto a 2 min job. I was able to put all of the dry ingredients into the mixer and blend on the lowest setting, whilst silmultanously adding olive oil to the mix, via the funnel function. Perfect for making something like a pesto.Ingredients:
- Fresh basil
- 60g pine nuts
- 50g parmesan
- 2 garlic cloves
- 100ml olive oil
Method:
- Toast the pine nuts in a shallow frying pan over a medium heat, until slightly browned.
- Put the basil, pine nuts, parmesan and cloves into the food processor and blitz on the lowest level.
- Add the olive oil to the funnel feature so that it is gradually add to the mixture, as you're blitzing.
- Serve with pasta by spooning over cooked pasta and heating thoroughly.
