Peanut butter and banana pancakes

This easy pancake recipe would make the perfect treat for your Mum this Mother's Day. It's super quick to make and looks fit for a Queen! I know I always like to be treated to breakfast in bed and what could be better than delicious yummy pancakes?!
These are incredibly easy to make, and so delicious. I've used my one cup recipe (that I stole from Jamie Oliver) and mixed it up with my own flavourings - peanut butter and banana. The beauty of this recipe is just that, that you can add any flavours or toppings you wish. I know my Mum isn't really a big chocolate fan, and neither am I (we're weird right?!), but I'm sure lots of you would love Nutella and banana too.It's all about the presentation too. Think about how you want to display your creation. Maybe you have an extra special pretty plate to serve on, or a beautiful oak dining table, or even better - a perfect bed tray to enjoy lazily whilst watching the sunrise. Bliss!Alternatively you could also create a savoury pancake if you preferred. Perhaps spinach and ricotta? Or tomato and mushroom? Okay, I'm going to have to try one of these combinations next time!

Ingredients (serves 2)
1 cup self raising flour
1 cup milk
1 large free range egg
2 ripe bananas, sliced
3 tbsp peanut butter
1/3 cup peanuts
1 tbsp olive oil
Drizzle of honey/maple syrup

 

1. To make the batter crack the egg into a large mixing bowl. Gently fold in the self raising flour, and add the milk a bit at a time. Whisk together.
2. In a separate bowl beat one of the ripe bananas to form a mushy consistency. Add this to the batter, plus 1 tablespoon of peanut butter.
3. Place a griddle pan on a low heat, add a tiny splash of oil and place your other sliced banana to fry. Note - you could also grill the banana in the oven.
4. Place  a large frying pan on a medium heat. After a minute (when it's hot) add 1 tablespoon of olive oil. Carefully add 2 ladles of batter mix to the pan, creating 2 similar sized circles.
5. Cook the pancakes for a minute or two. Using a fish slice, gently pull up the edges to make sure it's not sticking and to see whether the underneath has browned. The top of the pancake should start to bubble, which tends to mean the bottom is done, ready for you to flip!
6. Flip the pancakes and brown the other side, and then transfer to a plate. You should be able to make two more pancakes from the mix (possibly more, depending on how big you've made them).
7. Meanwhile crush your peanuts. You can do this using a mortar and pestle, or by placing them in a food bag and crushing them with a rolling pin.
8. Serve the pancakes stacked on top of each other, with a table spoon of peanut butter, the fried banana and a drizzle of honey. Scatter the crushed peanuts on top for the finishing touch. Enjoy!
