Grilled Balsamic Glazed Peaches on Toasted Banana Bread
A couple of weeks ago I featured a recipe for banana bread, with the addition of tasty almonds. I mentioned that I had used the bread as part of a delicious breakfast recipe. So today I'm blogging about that recipe.I saw a photo on Jamie Oliver's Instagram page, where he had toasted two slices of banana bread and layered Greek yogurt, grilled peaches and sprinkled nuts on top. I couldn't find the recipe on his website anywhere, so I went off just the photo I could see.It's actually fairly simple to create. The only part I was unsure of was how to make the balsamic glaze, which I had to Google to find a recipe for. Luckily we had all of the ingredients so we set to work making this treat of a weekend breakfast.I'd never toasted banana bread before, and immediately realised I'd been missing out! It's so good.
- 4 slices of banana bread
- 2 peaches, halved
- As much Greek yogurt as your heart desires
- A handful of chopped almonds
- 1 cup balsamic vinegar
- 1/4 cup brown sugar
Method:
- Begin by halving your peaches. This can be tricky, I ended up almost ripping mine apart completely and having to spoon some of the peach back into it's skin. Ideally you want to cut through to the stone, all the way around the peach. You then want to grab both sides and twist to pull apart.
- Make the balsamic glaze by mixing both the balsamic vinegar and brown sugar together in a medium sized pan, over a medium heat. Stir constantly until the sugar has dissolved. Bring the mixture to the boil and then simmer until the glaze reduces a little.
- Drizzle a little of the glaze onto a griddle pan on a medium heat. Place the peaches face down into the mixture and toast for 2-3 minutes. Keep the glaze on a low heat so it stays warm and continues to reduce.
- At the same time place your banana bread in the toaster. You may find you need to toast it twice, depending on how thick you cut your slices.
- Flip the peaches over and drizzle a little more glaze on them. You want them to be grilled on both sides so they go nice and soft.
- Place your toast on a plate, add a few spoonfuls of Greek yogurt and carefully place your peaches on top. Drizzle a little more glaze over if you have any left, and finish with a handful of chopped almonds.
